Get your daily nutrients in one quick and easy meal – healthy vegan Thai curry recipe 

I’m a big fan of packing as many nutrients as a I can in one meal, I’m also a big fan of easy, quick, tasty, recipes. After a busy day this simple but amazing Thai curry hits the spot and only takes 15-20 minutes!! It’s super healthy, nutritious and meat free too! 

Ingredients:

  • Coconut milk
  • Veggies of your choice (e.g. Baby corn, green beans, asparagus, broccoli, cauliflower, spinach, peppers, mushrooms etc)
  • Potato or sweet potato
  • Red Thai curry paste if you have time you can make your own-  Homemade vegan recipe or buy carefully Vegan friendly Thai curry paste
  • Jasmine rice (or rice of your choice)

Optional extras:

  • Lime
  • Lime leaf
  • Lemongrass
  • Chillis
  • Garlic
  • Ginger


(I made today’s meal – see pics, without any of the optional extras). 

Step by step method:

Dice up the sweet potato and microwave it for a few minutes, you don’t need to do this but it saves cooking time!!

Chop up veggies of choice (I recommend baby corn and baby asparagus) 

Rinse the rice in cold water and put it on to boil (follow packet instructions). 

Dollop a tablespoon or so of oil in a frying pan, heat it up and add the veggies. Stir fry on a medium- low heat for a few minutes until they start to cook. 

Mix together the coconut milk and a few tablespoons of red curry paste in a bowl. 

Add any optional extras.

After cooking your veggies for five minutes stir in your coconut milk and curry paste. 

Cool on a low heat for ten minutes until the veggies are soft.

Add any quick cooking veggies (e.g spinach, peas, cherry tomatoes)

Once your rice is cooked (taste it to be sure!) and your curry is cooked brought serve it up.

Voila a super quick and easy,healthy, tasty cruelty free after work/uni/school meal.
